The best chicken salad is within your fingertips! LITERALLY!
4 chicken thighs, boneless, skinless
3/4 c carrot, diced
3/4 c white onion, diced
3/4 c celery
3/4 c mayonnaise
3/4 c sour cream
1 Tablespoon garlic powder
1 Tablespoon onion powder
1 Tablespoon celery seeds
salt and pepper to taste
1 Tablespoon neutral oil
Preheat oven to 350 degrees. Toss neutral oil, salt and pepper on all sides. Place on a baking sheet and bake for 28-30 minutes or until the internal temperature reaches 145 degrees. Remove from baking dish, place in refrigerator to cool. When chilled, chop into small pieces.
In a bowl, mix mayonnaise, sour cream, garlic powder, onion powder, celery seeds, salt and pepper. Taste. Adjust with salt if needed.
Stir in chopped chicken, onion, carrots and celery. Taste. Season if needed. Taste.
Scoop onto fresh, bread. Top with lettuce, tomato. Slice and enjoy!
